This honey comes mainly from a species of heather. It produces a thick honey with a fantastic flavor.

Tree heath (Erica arborea) is a small shrub that blooms with purple flowers during the fall months at elevations of 300 to 500 meters in Arta, Greece. Rain in September is essential for a successful harvest. It is not produced every year because it requires a combination of the right factors, including wind in the mountains. The honey has a rich aroma and a caramel flavor. Sometimes it’s red, sometimes pure gold, like the latest batch. The honey crystallizes shortly after it is harvested.

All honey from Ebion, Greece, is processed without heating.
