White pepper is one of the most widely used pepper varieties and comes from the same plant as black and green pepper. White pepper is made from the ripe berries, which are traditionally immersed in water to remove the skin and then dried.

White pepper goes well with most things but is often used with seafood, pork, veal and lamb as well as with vegetables such as spinach and mushroom stews. The pepper is also widely used for white sauces when you don’t want the black dots that you otherwise get from black pepper.
